The Best Cucumber Sandwich Recipe for a Refreshing Summer Treat

I came across this recipe for a cucumber sandwich a few weeks ago.

I wasn’t sure if I was going to like it but I gave it a go because the sandwich looked to good in that Instagram reel.

Believe me when I say this – even if you don’t know how to cook – you can ace this cucumber sandwich!

It takes barely any time to prepare, doesn’t create a mess in the kitchen, and is healthy.

You can easily eat 2-3 of these sandwiches without feeling too heavy.

There’s no oil, butter, frying, or strong spices involved.

To me, each bite feels heavenly, especially in summers when you want to beat the heat.

So, let’s get to it.

Here are the ingredients you’ll need for your cucumber sandwich:

  1. Bread of your choice (Sourdough is pretty healthy)
  2. Cucumber; obviously (I suggest English Cucumber because it has smaller or no seeds)
  3. Yogurt of your choice (Plain works the best, it lets cucumber be in the spotlight)
  4. Salt
  5. Oregano
  6. Cheese spread (I suggest plain cheese spread)
  7. Feta Cheese (optional)

The Best Cucumber Sandwich Recipe

Take the cucumber and cut thin slices of it.

Use the slicing side of a box grater to do this faster and efficiently.

One cucumber is enough for 2 open-faced sandwiches.

Choose the number of cucumbers accordingly.

Place the thinly sliced cucumbers in a bowl and sprinkle half a spoon of table salt.

Mix the salt well with the cucumber with the help of a spoon.

Cover this salted cucumber’s bowl and leave it aside for about 5-8 minutes. If you can wait for 10 minutes, that’s the best!

Get other things done, make a cold coffee on the side, or scroll through reels.

While the bowl is left alone, let’s get the bread ready.

Take two slices of bread and toast them the way you like. You can put them in a toaster, a pan, or in a sandwich grill.

Keep the toasted bread ready on a plate.

Open the bowl in which you kept the salted cucumbers.

The cucumbers should have left water at the bottom of the bowl.

Scrunch the cucumbers in your hands to remove excess water.

The more water you squeeze out, the crunchier the cucumbers will get.

Drain the water out of the bowl and add the cucumber slices, and put plain yogurt on it.

Mix well.

Our cucumber topping is ready!

Now put the plain cheese spread on the bread you toasted.

You can replace this with any spread or chutney of your choice as well.

Spread the cucumber topping and finish off by sprinkling feta cheese & oregano.
